Latkes – Potato Pancakes

Potatoes are a foundation of my childhood, of my life, yet I see those sturdy, unassuming potatoes shoved and molded into some outrageous concoctions. On the other hand, if I don’t have them steamed or baked or boiled… I like latkes, otherwise known as potato pancakes. Again, relatively simple and easy to make. You will need a grater, one with 1/4″ to 1/2″ holes…


Latkes – Potato Pancakes


  • grated/shredded potatoes, maybe one per person
  • 1 small onion for one or two people, finely chopped or use the small grater
  • 1 large egg for two people, a small egg for one
  • 3/4 cup flour? Used enough to make everything stick together
  • a good shake of salt
  • black pepper to taste
  • vegetable oil or other fat for frying; I used about 1/2 T per panful
  • grate vegetables and mix in a large enough bowl for stirring
  • season with salt and pepper
  • break in a raw egg and mix well
  • add barely enough all-purpose (or whole wheat) flour for the batter to want to stick together
  • heat your frypan to about medium and add about 1/2 T of fat or oil
  • when hot, add about 1/4 cup of potato mix and shape it into a patty about 3-4″ in diameter
  • add more patties if there is room
  • after 3-5 minutes, it’ll start to brown; when golden (take a peek), flip and cook the other side until golden
  • eat

I like to top with a bit of grated cheese, or a drizzle of maple syrup, or top with apple sauce, or add a dollop of yoghurt or sour cream. It’s your choice!
